| Simple Syrup | 2 oz |
| Vanilla Ice Cream | 8 oz |

| Cajeta Quemada, caramel (110005) | 1 oz |
To begin, set the tortilla in a fluted mold in a 375 degree oven. Once the tortilla is set in its shape, deep fry in a 375 degree deep fryer for 5 seconds. Once out immediately dust with the cinnamon sugar to ensure it sticks. While the tortilla is in the oven you can saute the apples with the simple syrup just until fork tender.
Once ready, place the cinnamon tortilla on the base of a bowl or plate and scoop vanilla ice cream to fill. Top with the braised apples and mix the Cajeta with the left over simple syrup and heat.
Dress the plate with sprigs of mint and finally with the Dulce de Cajeta syrup mix.
