To begin,mix the cheese, chorizo and shrimp together with the chipotle paste. Stuff each fresh corn tortilla with half of the mix and roll tight. Place the edge of the roll face down in an ovenable pan and top with the salsa roja.
Bake in 375 degree oven for 6-7 minutes to ensure the interior is hot. Remove from the oven and plate both on an angle, drizzle with Cilantro Lime sour cream and plate with Mexican rice.
