| Roma tomatoes, diced | 8 ea |
| Del Sol Whole Jalapeno (180009) | 1/4 ea |
| Cilantro leaves, chopped | 4 tbsp |
| Fresh lime juice | 2 tbsp |
| Salt | 2 tsp |
| Olive oil | 2 tsp |
| Mexican beer (optional) | 4 tbsp |
| Pinch of sugar |
Put the onion in a sieve and run it under warm water for 3 to 4 seconds to sinse it. Drain the onion well and put it in a bowl with the tomatoes and all the remaining ingredients except the beer. Stir the salsa gently and briefly to blend the herbs and spices.
Pour the beer over and stir just to blend. Taste and adjust the seasoning. Cover and allow to stand for 30 minutes before serving at room temperature.
